This week’s #tenmileinthewild cocktail features the Buzzen Bee, created by Scarpetta’s Head Bartender, Marcio Rodrigues.

This is a twist on the classic Bee’s Knees cocktail, which originated during prohibition time. Listening Rock Gin’s notes of juniper, mint, lemon, and orange peel enhance the flavor profile of the drink. The extra touch comes from a creamy foam made with honey, lemon juice, and gelatin.

The Buzzen Bee

Ingredients

2 oz of Listening Rock gin
.75 oz fresh lemon juice
.75 oz honey syrup (1:1 ratio)
Topped with foam (see below)

Recipe

Add gin, lemon juice, and honey syrup to a cocktail shaker. Fill shaker with ice and shake until well-chilled. Strain into chilled cocktail glass and top with lemon-honey foam (recipe below).

Recipe for Lemon Honey Foam

The foam is a mixture of 3 parts of honey and 1 part of lemon juice.  To stabilize the foam, we use 2-3 gelatin sheets, hydrated in cold water for 5 minutes, then dissolve in a little bit of hot water. Combine all ingredients together (honey syrup, lemon juice, and gelatin) and place in a siphon. We use 2 chargers to give the foam an extra airy texture.
