Cripps 40 by Tenmile’s Tim Guy

Our first #TenmileintheWild cocktail for 2023 is an original concoction from Tenmile’s own Tim Guy (@therealtimguy). The Cripps 40 has been one of our favorite cocktails this winter, with its delicious blend of textures and flavors. Stop by the distillery to try one for yourself!

The drink takes its inspiration from the classic Pink Lady cocktail. Cripps is the cultivar name for Pink Lady Apples, and so a new classic was born.

Tim says “The whisky and gin complement each other thanks to the malted barley presence in both mash bills. The spiced notes in the grenadine bolster the citrus aromatics in the gin. The round character of single malt whisky tempers the flavor, while the egg gives texture and rounds out the edges of this pretty perfect cocktail.”

Cripps 40

Ingredients

1.5 oz. Listening Rock Gin
.5 oz. Single Malt Whisky (we used our Little Rest Whisky… available April ’23)
.75 oz. Lemon juice
.75 oz. Spiced whole pomegranate grenadine
Egg white

Recipe

Add all ingredients but egg white to a shaker tin. Fill with ice and shake until well chilled. Strain mixture into another shaking tin, and discard ice. Add egg white into tin with mixture and dry shake without ice. Fine strain into a chilled cocktail glass and garnish with a few drops of bitters on egg foam.

Spiced Pomegranate Grenadine

Ingredients

32 oz unsweetened pomegranate juice
32 oz granulated sugar
3 sticks cinnamon
6 peppercorns (cracked, not ground),
2 cloves,
1 pod star anise,
1 pod green cardamom.

Recipe

Combine all ingredients in a medium saucepan, bring to a simmer. Remove from heat and steep for 30 minutes.  Strain to remove solids.

While we love everyone’s furry friends, pets are not permitted inside the building due to health codes. Leashed pets are permitted on the outdoor patio or in the orchard, but please note there is no longer any patio furniture outside until Spring!
